June 13: Summer Goals and Childhood Memories

June 13Th Summer goals
I know goals are important but I am on that does not have a good track record with goals. With that being said..here are my goals for this summer:
- Lose weight
- Deep Clean my house
- Get all the weeds out of my rose garden
- Fit more time in for friends
- Save money for the upcoming trips!
- Visit my dad in TN

Update on E-Mealz
Now that I've tried e-mealz for a few weeks let me tell you what I think.
Before I joined I had been on the first two weeks of the Atkins diet again. It always works for me but I get so bored that I quit. This time I have a goal in mind..my 25th class reunion in September so I figure it's now or never with the weight loss. As of this morning I'm down 11 lbs!
I was at the two week mark of Atkins and getting pretty tired of eggs and kielbasa for dinner every other night. I also am not a great cook and either is Vic so our diet pre-Atkins was take out and restaurant food much of the time. So when my sister told me about e-meals and said that they plan a menu for you each week and even print out the grocery list I was intrigued to say the least. Finding out they had a low carb plan just was icing on the cake (oh God how I want a cake about now!!)
So I joined and printed out my first two weeks meal plans. There were things that I knew we would not probably try (Fish) and others that looked really easy. I combined the two weeks to come up with five meals that I knew we'd try. We went to the grocery store and spent around $60 for five meals worth of foods...great deal! You can pick a plan and use Walmart, Publix, Kroger I believe and others...or "any store". We choose Walmart even thou we buy our meat at Publix. It doesn't really matter other than if you pick a specific store they will try and plan your meals around what is on sale that week so you get the best value...which will save you $$ in the end.
The first meal we tried was buffalo chicken with a honey dew melon as the side. It was delicious! what I liked most is that it was so easy!! Being a non chef I really appreciated the directions to beat/flatten the chicken before you put it in the olive oil. I always worry about cooking meat and not getting it done enough, but it turned out great in the time that they said it would!
The next meal we tried was turkey slices wrapped in a low carb tortilla shell with chopped pecans,and shredded cheddar cheese, dried cranberries and shredded lettuce..they were good and gave me the idea to use the same ingredients with tuna ...so we've had a few meals with that idea now..Great for a light dinner or lunch!
